DISCLAIMER: Do not make these alone because this 8x8 of beautiful goodliness will disappear right before your eyes! These cookie bars just happen to be the perfect thing to top off your weekend of eating whatever wherever whenever. And these aren't just s'more bars. I wanted to preface that. The jumbo chocolate chips hidden throughout create a consistency of a chocolate chip cookie wrapped in warm marshmallow. Woah. Excuse me while I mop up my drool. Enjoy.
I N G R E D I E N T S
--1/2 cup softened butter
--3/4 cup light brown sugar, packed
--1 large egg
--1 tsp. vanilla
--1 cup flour
--1 cup graham cracker crumbs
--1/2 tsp. baking powder
--1 heaping cup jet-puffed marshmallow creme
--1 1/4 cup milk chocolate chips (USE GUITTARD PLZ)
PREP WORK:
--Preheat the oven to 350 degrees
--Line an 8x8 pan with aluminum foil and spray with cooking spray and set aside
--In the bowl of an electric mixer, mix together the sugar and butter until combined.--Mix it on high for about 2 minutes, until it's creamy.
--Next, add in one egg and some vanilla and mix again, combining everything.
--Kewl.
--Meanwhile, in another bowl, mix together the flour, baking powder, and graham crumbs until incorporated.
--Mix the dry ingredients in with the butter mixture and mix until combined (it'll be a little crumbly).
--Divide the dough and pour 2/3 of it into the pan, pressing it down until even. Save the rest to put on top later.
--With a spatula, sprayed on one side with cooking spray, dump out the marshmallow creme onto the first layer and try your best to spread it out evenly. Don't skimp on this part. If more than 1 cup is what is needed, don't hold yourself back!
--Spread the chocolate chips on top of the marshmallow creme, and then add a little more marshmallow, because it's a Sunday night somewhere.
--With the rest of the dough, flatten out the dough into pieces and lay them on top of the chocolate chips. Mine looked a little cobblestone-ish, and it's okay if some holes are left. That'll leave room for the marshmallows to ooze out and look delicious.
--Bake for 25 minutes, or until lightly golden on the top. Remove and allow to cool completely before cutting into bars. The bars are much easier to cut once the marshmallows have taken shape, however, eating these while hot and gooey are fun as well!
