St. Patty's Luck o' the Brownies

I N G R E D I E N T S


--1 stick of butter, melted
--1 large egg
--1 cup light brown sugar, packed
--2 tbsp. water
--1 tbsp. vanilla extract
--1/2 tsp. peppermint extract
--1/2 cup plus 1 tsp. cocoa powder
--1/2 cup flour
--25 mint Oreos

D I R E C T I O N S

--preheat oven to 350 degrees.  spray an 8x8 bakin pan with baking spray and set aside.

--in a large microwave-safe bowl, melt the stick of butter, about a minute and a half.


--wait about a minute before adding the large egg to the bowl of melted butter, to avoid scrambling of the egg.  After the egg, add the brown sugar, water, vanilla, peppermint extract, and whisk until smooth.


--whisk in the cocoa powder.  It could take several minutes to really get all the cocoa powder incorporated.

--add the flour and stir until just combined.


--prepare the 25 Oreos by quartering each one, breaking each one in half and then in half again.  Set aside 5 of the 20 Oreos; these will be used to sprinkle over the top.  
--stir the 20 Oreos into the brownie batter.  

(how many times can i say Oreos in this??) 


--pour batter into the prepared pan, trying your best to evenly disperse the Oreos within the batter.  Smooth the top lightly with a spatula.
--take the remaining 5 Oreos and sprinkle over the top evenly.
--bake for about 28-30 minutes, then take out and, somehow, allow them to cool for about 30 minutes before slicing into them.  Enjoy!
